		<description>Wonderful use of ricotta and rice in a cheesecake. I&#039;m very intrigued by the textures. Your ricotta recipe is different from the Lebovitz one I made this morning. He uses milk, yogurt and vinegar. I want to try the 101 recipe soon. Yum yum KP, love the way you did the strawberries. Divine!!

(a) seriously consider putting ricotta-making on my &quot;to-do&quot; list (I&#039;m mildly lactose-intolerant so that quantity of milk is seriously intimidating although I do love fresh ricotta); 

and 

(b) remind myself to check back on this post when strawberries begin appearing at the Greenmarket.  Probably not for another three to four weeks.  It&#039;s been a relatively cool spring, in fact our first real spring here in NYC in quite a while.</description>
