		<description>Oh, I am a huge sucker for tamales -- and the red pork filling is one of my favorites.  We&#039;ve always purchased fresh masa from the Mexican grocer in our neighborhood -- but it looks like you had very good results making your own with dried.  It&#039;s giving me a serious craving.

The amount of lard/fat in a tamale recipe was certainly a bit shocking to me -- but all the more reason to use a high quality lard or shortening.  Make it nourishing, rather than fattening. And it&#039;s all good!!

Especially because you used banana leaves, just like Oaxacan tamales, I am really, REALLY hungry right now. And just a not, they are called tamales when it is plural and tamal when it is sigular. :)
