		<description>Hi, This is a fairly traditional Italian cake.  Boiling the oranges removes the pungent oil from the peeling and softens it which allows it to be processed so easily.  It also helps make it edible!  I honestly don&#039;t know about the cornmeal.  The almonds take the place of flour in many types of cake which is great if gluten is a problem.  There are versions of an orange cake made with cornmeal, but many I&#039;ve seen either add flour, and/or some almond meal.  There are possibilities to include rice flour instead of the regular flour, but not having made this myself, I&#039;d have to experiment.  Good luck!</description>
