It is an easy, filling and nutritious dish. I usually make it with lamb given the ' Shepherd ' in the name. If i make it with beef I call it cottage pie and use scalloped potatoes on top. I'll try to remember to use a pastry tip and try for a fancy potato top like I see on yours. Mine's just some beef and chicken sausage but I've jotted some notes from yours for next time. I can't separate some foods from travel and this is one of them for me. When we sailed across the Atlantic, Shepherds pie was the dish our captain requested. The only part of this post that confuses me is your comment the meal would have been more fun with Guinness. Very informative. I often turn to Shepherd's Pie when I don't know what to cook for my super picky Irish-American boyfriend, so I'm a bit tired of my version.
