My favorite muffin, at the moment (and you would like it if you're a fan of not-too-sweet) is the cranberry zucchini muffins from Martha Stewart's Baking Handbook. Typically I'm not a huge fan of her recipes, but this is good. And good deserves acknowledgment. I love the history.
