Hi Inga -- The cooking allowed for a reduction which always intensifies the flavor, so not as much liquid needed to be added. The frosting was very stable and held its shape. Since I made these, I made a strawberry cream cheese frosting from the sauce as well which was fabulous, but not as stable. I haven't gotten around to posting them -- I'm so backed up!

Thanks for the wonderful sounding recipes and feedback! Surprisingly, I just made a strawberry buttercream for the first time, but used a much simpler method - I pureed fresh strawberries, pressed mixture through a sieve, and measured 1 1/2 cups into an italian meringue buttercream recipe that said it makes 4 1/2 cups. It tasted delicious and the texture was lovely. I'm curious why both recipes above call for cooking?

that is a good idea. we have a pick your own strawberry field up the road from us and usually end up there several times during the season. fortunately they do not weigh my children before and after and charge me for the difference because my boys eat alot more than they pick!
