I really love how well you documented the caramel process. When I tried it for the first time (for my caramel popcorn balls) I was a bit mystified at all the directions, and totally without a candy thermometer. I could definitely see your comment about pistachio. Something a little salty but with that extra little pistachio oomph. These look scrumptious!
